Manakla (Alpheus takla, a large native snapping/pistol shrimp with one large pincer) cooked in coconut milk (gatâ) with okra, pakô (vegetable fern), and chili. Sourced from mangrove forests of Santa Cruz and Torrijos; the species was recently described as new to science.
